In this class we will work together to make falafel, two different types of kofta (one with beef and pork, and one with chicken), and grill bread. We will talk through the process of making a perfect falafel from sourcing and soaking the chickpeas, to bringing it together and of course frying them as well as talk through tips and tricks for making a kofta that stays moist, and is is full of flavour.

Sstart the night with Baja Fish Tacos, featuring battered fried snapper finished with a Cabbage Slaw and Onion Pickle. Next up are Tostadas de Tinga de Pollo, crispy tortillas topped with a black bean purée and poached and pulled chicken bound in an aromatic chipotle chili and tomato sauce. Then you'll be building your own Steak Tacos, with cast iron seared skirt steak and two salsas, one red and one green!

Experience a taste of Spain right here in yeg. gather around our Chef's Table to make Tortilla de Patatas, a favourite at Tapas bars throughout Spain. While our Tortillas are cooking you'll learn to make a Seafood Stock, that we'll use to prepare Fideuà, a "pasta paella" of toasted pasta cooked in stock with mussels, shrimp and squid. Then we'll pan sear (or barbecue, weather permitting) steaks that we'll serve with Romesco Sauce, a delicious combination of roasted red peppers and tomatoes with almonds and bread.
