Join Kathryn Joel online for this taste of Italy as you learn to make her sumptuous Duck Leg Ragu together with a batch of fresh homemade Pappardelle to serve it with. We'll start with the Ragu, then while it's slowly braising we'll make our pasta dough. Plus we'll we'll whip up a pot full of Fennel Soup while our pasta rests, to enjoy as a starter with our Sunday evening pasta meal.

Join Kathryn Joel for our in person class on how to make Risotto and Arancini, and you'll learn how to make your own lovingly stirred and perfectly al dente seasonal Risottos. Then as we stir, we'll discuss the types of rice to use, and how to adapt the flavour of your Risotto easily too. You'll also learn to use your leftover Risotto the Italian way as we hand form, stuff and deep fry a batch of Arancini. Plus to go with our deliciously decadent deep fried risotto balls we'll make a perfectly spicy Arrabiata Sauce.

Learn to make Hand Pulled Noodles

Learn how to make Biang Biang (Hand-Pulled) Noodles in this in-person class with Mai Nguyen, as well as an appie of Twice Cooked Eggplant with Black Bean Sauce, and Cumin Lamb Sauce to serve with your Noodles. Popularized by Xi'an Famous Foods in New York, hand-pulled noodles are made with a wheat flour dough that's cut into strips then pulled into long noodles. Mai will walk you through how to make the dough, then you'll learn to pull and cook your noodles. She'll also teach you how to make her Eggplant in Black Bean Sauce as well as Chili Oil and Stir Fried Cumin Lamb to serve together with your freshly pulled and cooked noodles - we can leave out the lamb if a vegetarian version is your preference!

Join Owen Petersen for his popular class on sourdough basics, and you'll learn to make your own loaf of sourdough choosing the flour combination of your choice, then you'll take your prepared loaf away with you to bake at home. At the start of your class, Owen will teach you how bake your sourdough loaf in a Dutch Oven using loaves he's prepared ahead. Then when you're not working on your loaf, Kathryn will be on hand to teach you how to make her Panzanella as well as a seasonal soup to enjoy with samples of Owen's freshly baked bread. Owen honed his baking skills during his years as the head baker and owner of Prairie Mill Bread in Riverbend, but nowadays he's busy making gin with his most recent venture, Greenwood Distillers in Sundre.
