Dolly’s Cocktail Bar is Open Now in Edmonton
You’ll find more than cocktails on the menu at Dolly’s, in Edmonton. The brand new spot opened up in the previous Fu’s Repair shop room, where the vibes are immaculate and the cocktails are fresh. The room is pink on pink, texture on texture, and includes everything from opulent chandeliers to a fun feature wall of lap dogs. The pink bar is a centrepiece to the room, and we enjoyed how bright the space felt (even though we loved the grit of Fu’s in the previous space).
Dolly’s Cocktail Bar: The Drinks
There are two cocktail menus to choose from, with house cocktails and delicious, fresh and fun options like a tower of bubbles. While we dined, we tried a few of the cocktails, notably: Dolly's Dreamhouse (the watermelon infused mezcal is delicious), Pornstar Martini - that comes with a side of bubbles!, and the Love Hangover (so fresh). Overall, the cocktails were fresh, well concocted and arrived as expected, in gorgeous hues of pink and purple.
Don’t skip The Pomeranian. This drink is a fun take on a classic bulldog where instead of crushing a beer into the top of a slushy drink, you’ll smash a delicious (and refreshing) drink of aperol and orange slush, with a miniature bottle of Prosecco in the top. Dolly’s is right, this drink does have big dog energy.
We’re excited find two, easy-to-order mocktail options on the menu at Dolly’s, including: Thank you for being a friend ($8), with peach syrup, lemon, iced tea and soda, and a second option, pretty in pink with strawberry, cream of coconut, lime and soda ($8).
Dolly’s Cocktail Bar: The Food
The food is Peruvian inspired, and a delicious new option to Downtown Edmonton. We tried the Huancayo style potatoes, the chicken lollipops, Nana’s empanadas and the banana split to finish. The food was sized well for sharing, and the Peruvian spiced cheese sauce on the potatoes, and the Chef Josh’s fresh sauce with the empanadas had us enjoying every last drop.
